Cape Fear Grilled Cheese

Pimento Cheese

Butter

Texas Toast

1/2 pound shrimp peeled and chopped

1 small onion chopped

This recipe may sound crazy, but you need to try this sandwich.  Make sure you have a large saute pan, especially if you make more than two at once.  Of course everyone should know how to make a grilled cheese, so the same rules apply. 

Melt the butter, and then saute the shrimp and onions together. Add a pinch of salt and pepper. 

Once the shrimp is pink and the onions are clear, remove from pan and let cool.  Add some more butter to pan. 

Spread the pimento cheese on bread, add shrimp and onion, top with the other piece of bread, and place into pan. 

Once your sandwich is golden brown on each side, it should be done. 

Side dishes for this sandwich are completely up to you, but a salad (healthy) or french fries (not so healthy) goes well.
