Oven Roasted Fish & Veggies

Well, now we all know that summer is in full swing, and along with summer comes the heat. But before you complain about how hot it is, remember what a long, cold winter we had.

I have thought many times of bringing one of my pictures of my snow covered house and my son and our snowman offshore fishing with me just to make sure I don’t forget about winter and the cold. But every time we start to catch fish, I completely forget about complaining about the heat. 

If you have braved the heat and hit the water for its bounty, here is a very simple, fresh recipe that you may use any of your catch (or whatever looks good at the fish house). 

You will need:

1 large mixing bowl

1 large roasting type pan (brownie pan)

1 lb. red potatoes washed and quartered

3 red onions cut into wedges

2 zucchini cut into larger chunks

2 yellow squash cut into larger chunks

8 cloves fresh garlic (sliced)

2 lemons cut into wedges

4 small sprigs fresh rosemary

4 tbsp. olive oil

4 tomatoes cut into wedges

1.5 lb. fresh fish cut into chunks

salt & pepper

Add all of the vegetables to a bowl, and season with salt and pepper. Then add the rosemary sprigs (whole), and follow with 3 tbsp. of oil. 

Other than the fish chunks, toss in the rest of the ingredients (including the lemon) until everything is coated with oil. 

Place these ingredients in a roasting pan and put in a 400 degree oven for 40 minutes, or until potatoes are tender.

Pull from the oven. While this is sitting, use the remaining oil to coat your fish. I also recommend hitting the fish with a little more salt and pepper. 

Now place the fish on top of the veggies and put back in the 400 degree oven. The dish should continue cooking for approximately 15 minutes, or until fish is flaky. 

Make some garlic bread, grab a bowl and dig in.

Eat local seafood twice a week!
